&lt;p&gt;1. i have a fond spot in my heart for biologists. my best girl friend (call her my wife) is a biologist and so anyone who i associate with biology i associate with her. already love this post. ;)&lt;/p&gt;

&lt;p&gt;2. i fail at aioli every time. i think i add oil too quickly. will try again.&lt;/p&gt;

&lt;p&gt;3. fresh, small scale, organic, local happy eggs make aioli worth while. when raised in this fashion, there is no reason to be wary of using them raw. in my opinion at least.&lt;/p&gt;
